Intrepid readers will recall this project from an earlier post:
I give you finished roast beet and jalapeño soup! It’s in the cup on the right, garnished with a dollop of plain yogurt and some chopped jalapeño, served with egg whites on toast with salsa and avocado, and iced white tea with lime.
We came by the beets after a generous gift from our friends Anne and Neil. They get a farmshare from the Crown Heights CSA, but they were going out of town just after July’s allotment was to arrive and wouldn’t be able to eat all their organic local veggies. Part of the haul was an assortment of beets and turnips (I love the marbled pink and white ones).
A confession? I don’t really like beets. While pondering what I could make with them that I would actually eat, I got the idea that their earthy taste might go well with a smoky, spicy pepper. Some oven-roasting, simmering, and blending later, soup was born. It is pretty darn tasty, but I don’t think it’s raised beets too much in my gastromic esteem. The real litmus test is how Neimah likes it. I’ll have to ask him tonight when he gets back from VA with his band.
I was out with some friends from work last night, and somehow managed to volunteer myself to make us some Key Lime Pie. Luckily, it’s a pretty easy thing to make (if you get a premade crust, you don’t even have to turn the oven on), and it gave me an excuse to try out the juicing attachment of my new/old mixer.
Nanny Jo sent me a vintage KitchenAide standup mixer for my birthday, along with several of its original attachments. I technically own a meat grinder. It’s kind of cool. While the big glass part of the juicer attachment broke in shipping (despite my engineer grandfather’s best attempts to pack it safely), I have to say the juicer still worked like a charm. Most of the yield went into the measuring cup, and it was a heck of a lot quicker than attacking halved limes with a fork, which is what I usually do. Just used the standard recipe I stole from Rick, although I did add a drop of green food coloring just for fun. Pie #1 and pie #2 are safely in the freezer setting up, and I will have one to take to work tomorrow as promised AND one to leave here for my honey to eat.
I might have a piece of that one too. I haven’t decided yet. 😉 Some new knitting should be posting soon. And I seem to be on a cooking tear, so who knows what’s coming from the kitchen next!
