{"id":92,"date":"2011-01-14T14:11:43","date_gmt":"2011-01-14T19:11:43","guid":{"rendered":"http:\/\/missaudrey.net\/wordpress\/?p=92"},"modified":"2011-01-14T14:11:43","modified_gmt":"2011-01-14T19:11:43","slug":"chicken-noodle-soup","status":"publish","type":"post","link":"http:\/\/missaudrey.net\/?p=92","title":{"rendered":"Chicken Noodle Soup"},"content":{"rendered":"<p>I spent a little time with the Ji last night after quite a hiatus, and (as usual), her mom had left instructions on what should be used up for dinner.<\/p>\n<p>Now usually Ellen just leaves me a list of the raw ingredients and leaves me to my own devices when it comes to their combination and service thereof. \u00a0Occasionally she will request a certain dish, but there&#8217;s still usually a lot of latitude in what I can do with it. \u00a0When I was babysitting regularly, it was like my own personal Iron Chef, twice a week.<\/p>\n<p>But I was surprised last night when I picked up my instructions, and they said specifically &#8220;chicken noodle soup with the chicken and carrots and pasta from last night.&#8221;<\/p>\n<p>Wow. \u00a0Game on.<\/p>\n<p>I pulled out the specified items, grabbed a couple of other promising ingredients, and gave it some thought. \u00a0Then I threw a bunch of stuff in a pot. \u00a0And delicious came out. \u00a0It turned out so well that I thought I should share it.<\/p>\n<p>Let&#8217;s face it, folks: it&#8217;s wintertime. \u00a0It&#8217;s cold. \u00a0Your immune system may not be showing its best face to the world. \u00a0When that&#8217;s the case, it can make you crave some nutritional comfort for serious.<\/p>\n<p>To that end, I present today&#8217;s entry.<\/p>\n<figure id=\"attachment_93\" aria-describedby=\"caption-attachment-93\" style=\"width: 247px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/missaudrey.net\/wordpress\/wp-content\/uploads\/2011\/01\/chixnoodlesoup.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-93\" title=\"chixnoodlesoup\" src=\"http:\/\/missaudrey.net\/wordpress\/wp-content\/uploads\/2011\/01\/chixnoodlesoup-247x300.jpg\" alt=\"\" width=\"247\" height=\"300\" \/><\/a><figcaption id=\"caption-attachment-93\" class=\"wp-caption-text\">It will fix everything that&#39;s wrong with you.<\/figcaption><\/figure>\n<p>Ingredients:<\/p>\n<ul>\n<li>2 c. pulled roast chicken (you&#8217;ll want about a 3:2 ratio of dark to light meat)<\/li>\n<li>1 c. carrots, chopped<\/li>\n<li>1\/2 c. shallots, roughly chopped (if you sub onions, chop fine and add about 1 tsp. garlic powder)<\/li>\n<li>1\/2 c. peas, rinsed and drained<\/li>\n<li>4 c. chicken or veggie stock<\/li>\n<li>2 c. water<\/li>\n<li>2 Tbsp. olive oil<\/li>\n<li>2 Tbps. butter<\/li>\n<li>2 Tbsp. flour<\/li>\n<li>approx. 30 strands of linguini, broken into thirds<\/li>\n<li>salt and black pepper to taste<\/li>\n<\/ul>\n<p>What to do:<\/p>\n<p>Heat the oil in a large pot over medium high-heat. \u00a0Add the butter. \u00a0Once it&#8217;s bubbling nicely, toss in your shallots and carrots. \u00a0Cook until shallots are translucent and carrots are beginning to get tender, about 5 min.<\/p>\n<p>Add the flour, and stir constantly until the carrots and shallots are evenly coated and golden and the flour doesn&#8217;t look starchy anymore. \u00a0Add the chicken and peas, still stirring, to ensure everything gets a little touch of the roux. \u00a0Once it&#8217;s all nicely incorporated, add the stock and the water. \u00a0Give it another stir, cover the pot, and leave it alone for awhile to let the stock reach a simmer.<\/p>\n<p>When the stock has begun to simmer, do a little taste test. \u00a0Add the salt and pepper in the quantities that please you. \u00a0I like a lot of pepper in mine, and even a pinch of paprika. \u00a0Let things simmer along for 7-10 minutes, until the chicken begins to come apart a little. \u00a0Then reduce the heat a smidge and toss in your noodles.<\/p>\n<p>Check on the pot every 2-3 minutes, because you&#8217;ll want to turn off the heat as soon as the noodles hit <em>al dente <\/em>so they don&#8217;t turn to complete mush. \u00a0Ladle into bowls, and feel immediately better.<\/p>\n<p>Serves approximately 8. \u00a0I haven&#8217;t had any experience with how it keeps and reheats, so if you decide to make it, please leave some comments on how it stores!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I spent a little time with the Ji last night after quite a hiatus, and (as usual), her mom had left instructions on what should be used up for dinner.
